It's maybe a slightly slow-going process (imagine a week or two in game), for the staff to change from being somewhat annoyed by Carmy's presence in the kitchen to begrudgingly accepting of his role in the kitchen staff. Giles, a traditionalist at heart, will not approve of changes to the menu — however, there is also something to be said about treating guests with optimal manners, so while he will be bluntly passive aggressive towards Carmy, he'll also draw the line at manhandling him out of the kitchen. In his mind, he'll have the thought: this obviously won't go over well with the Balfours, so it will be a rebellious one day thing, before everything goes back to normal.
Naturally, his breakfast will be met with a lot of confusion. Jonty, the most stubbornly British and old fashioned of the lot will be the hardest to convince, but Portia actually likes change, and will say something to the tune of, "Remember our vacation to Portugal? Remember fresco breakfast in Italy?" and eventually get him to try it out. Presumably Carmy will do a fantastic job with whatever he cooks up and everyone will be happy, except Giles, who is never happy.
So: it will mess with his reputation with Giles, but everyone else will think it's pretty nice (see: kind of cute, like a puppy doing a trick) that he wants to cook, and breakfast will be his. You can fill in any of the blanks of this interaction on your own (any of the wait staff you want to name or give personalities, any bitter chefs annoyed at him becoming head breakfast chef, etc.) and make up any other consequences that would be fun for you.
